The biggest complaint I hear when I talk to people about cooking is that they don't have time. Well, there is a magical device that can save you time and deliver amazing results. I'm talking about the humble pressure cooker.

In this episode of 'Kiss The Cook,' I will show you how to make red beans and rice. You'll go from dry beans in your cabinet to a hot ready meal in under an hour! Here's how it's done:

1 lb dry red kidney beans
1 tblsp olive oil
1/2 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped bell pepper
1 tblsp garlic powder
2 tblsp dry parsley
1 bay leaf
3/4-1 lb Down Home Meats sausage cut into pieces
water
salt and pepper

For this recipe, you will need a 3 qt pressure cooker or larger.

On medium high heat, put the olive oil in your pressure cooker then add the onions, celery, and bell pepper. Ad a little salt and pepper and stir. Add the garlic powder and stir. Add in sausage. Stir. Add your beans which have been sorted and rinsed and enough water to cover, but DO NOT fill your pressure cooker more than 3/4 of the way full. Put the lid on and bring up to pressure. Once the pressure cap is doing its dance, start the timer for 30 minutes and lower the heat to medium.

Cook your rice.

Once 30 minutes have elapsed, remove the cooker from the heat and let it cool down until the pressure indicator goes down. You can speed this up by placing the whole pot under cold running water. Once the pressure is released open the cooker carefully and there ya go! Red beans and rice in less time than it takes for a pizza to show up at your house.
