While most of my girlfriends are so excited because of being able to wear their favorite fall clothes during a cold front, I am stoked because it means I can finally cook some of my favorites. Some Southern food you just enjoy much more with cold weather, this is one of those recipes! If you need a quick easy Jambalaya recipe I have you covered. I stole this one from my friend Hillary who pulls this recipe off every time she needs to feed her family and wants little to no prep time.

You'll need:

  1. Down Home Meat Sausage
  2. Bag of Seasons Blend
  3. 1 Tablespoon of minced garlic
  4. 1 Cup of Rice
  5. 2 Cups of Chicken Stock
  6. Half a stick of butter
  7. 8 oz of diced tomatoes
  8. One Carton of Sliced Mushrooms

In a medium sized stock pot add sausage cut into coins. Let the sausage cook, then add a bag of seasons blend, or the Cajun holy trinity. Let all that mix in for a couple of minutes then add the garlic, mushrooms, butter, and tomatoes. Stir in your Tony's seasoning, remember it's to your taste, you can always add more Tony's but you can never take away! Add the rice and chicken stock. Bring it all to a boil, then cover it and let it simmer for 30 minutes or until the rice is cooked. I normally add the rest of the Tony's seasoning after it is cooked that way I don't make a salty Jambalaya.
