Is there anything you can't so when Louisiana rice is involved? The answer is no, there really are no limits. This Shrimp & Chorizo Fiesta Louisiana Rice had my tastebuds all kinds of confused in the best of ways. It is a Mexican or a cajun dish? Who cares it's delicious! Thank you to Tresa Frye for your delicious submission for the Lousiana Rice Recipe party taking place in the Kiss Country kitchen.

What you will need:

  • 3 cups of Louisiana Rice
  • 1 /2 lbs. of peeled and deveined medium shrimp
  • 2 package of Chorizo
  • 2 1/2 cups thinly sliced bell pepper
  • 1 1/2 cups thinly sliced red onion
  • 1 Jalapeno 
  • 1 Tbsp minced garlic
  • 1 Tsp red chili flakes
  • 2 Tsp Ground Cumin
  • 1 Tsp Chili Powder
  • 1 stick of butter (for the rice)
  • 1/2 cup chopped Cilantro (For Topping)
  • Wedged Lime (For Topping)
  • Avocado (For Topping)

Get your Louisiana rice cooking first. You will need cooked rice for the final step of the dish. Add the stick of butter to the rice once the rice is done cooking.

Put the chorizo in a large pan over medium heat. Cover the chorizo and let it cook for a couple of minutes. Add the bell peppers, onions to the chorizo. Stir the ingredients for 2 minutes. Add the shrimp. When the shrimp is halfway done, add the chili flakes and some Tony's Seasoning (to taste). When the shrimp is finished cooking add the rice to the pan and get to mixing.

The process should not take you longer than 30 minutes. It is a quick delicious meal that will have your guests begging for seconds. You can add avocado, lime, and cilantro to your dish.
