Easy Prep, Healthy Lunch Idea
I've decided to take my health into my own hands and in addition to working out, that means eating healthy!
Granted, a salad is only as healthy as you make it, but I tried hard to build a salad that was healthy AND tasty!
I go to work way before the crack of dawn and I'm usually eating a frozen breakfast sandwich on the way in. By the time 10am hits, I'm hungry and if I don't food prep, 9 times out of 10, I'll make a bad food decision. To avoid hitting the vending machine or the drive thru, you have to plan your meals. Even if it's just throwing a protein bar in your bag for a snack to tide you over before you leave for work!
I'm always pressed for time so I placed my supply order using the free Walmart grocery service. Here's what you need:
- Ziplock bags
- Lettuce and assorted greens, the darker the better
- Some kind of protein, I used cubed ham and grilled chicken
- Add on veggies. I opted for sliced mushrooms, shredded carrot and cherry tomatoes
- Cheese... not nearly as much as wanted though ;(
- Low fat, low calorie salad dressing
I was able to prep six salads for the week and they're huge so I probably get more than one meal out each of them!
Of course, part of losing weight is eating less and moving more. I'm moving more by riding my horses and going to the new Orangetheory Fitness in Shreveport 2-3x a week!
