Now, before you come after me for even suggesting there was a better way to make gumbo than your grandma has been doing since you were knee-high to an alligator - just know that's not at all what I'm doing here.  What I am offering is a way to make grand-mère Thibodaux's delicious gumbo a little healthier - without affecting the taste.

If you have to have the absolute lip-smacking goodness of the "groceries" Louisiana has to offer, but are less than impressed with its affect on your health - you're going to love this.  While researching another article on health and food, I stumbled across some recipe ingredient substitutions that might just fix that for you.  Personally, I'm not going to stop eating Cajun dishes.  So, for me, this is a way to circumvent my inability to say no to a good jambalaya and start taking better care of myself.  Win-win!
