The story started back in 2006 when Lisa and her business partner opened Lilah’s Bakery, naming the shop after Lisa’s daughter. Lisa’s mission was simple: celebrate Louisiana’s rich culture through food. She poured that passion into developing a signature King Cake recipe, a recipe they still swear by today.
By the time they started selling them in 2008, they moved about 70 cakes. But Lisa had a philosophy that resonated with the 318: keep it fresh and use flavors as uplifting as the Mardi Gras tradition itself.
That formula didn't just work; it exploded. By the 2022 season, that number skyrocketed to an estimated 22,800 cakes.
To handle that kind of madness, the Lilah’s family grows to about 25 people every Mardi Gras, many of whom are veterans who return year after year to help feed the frenzy. Their success has been so massive that they’ve even started holiday-themed cakes for Easter, Halloween, and Christmas, using those same legendary techniques.
