Ki Mexico in Shreveport’s Highland neighborhood is far from a hidden gem. In fact, this beloved spot started out as a humble pop-up stand back at the Shreveport Farmers’ Market. Fast forward to today, and it’s easily one of the busiest, most bustling eateries in town.

Since 2010, Ki Mexico has been serving up what they proudly call “Mexican Soul Food”, dishes rooted in a deep, authentic passion for bold ingredients and incredible flavors. A major turning point in their story came in 2015 when they officially opened their brick-and-mortar doors. Ever since, Ki Mexico has solidified itself as a true Shreveport staple, a local destination, and simply the place to be.

While their standard menu is legendary, trying to find the right words to describe their weekly specials is almost impossible. Half the joy of dropping by is the pure element of surprise when you see what creative magic the kitchen has cooked up.

On Wednesdays, however, this Mexican eatery completely switches things up. Midweek is all about gourmet Wagyu burgers, crafted exclusively for "Hamburger Wednesday" by Chef Eleazar Mondragon. These specialty burgers are strictly sold until they’re gone. Your safest bet is showing up right at lunch—if a weekly special somehow hasn't sold out before dinner, consider yourself extremely lucky!

I finally caved and dropped in on a Wednesday a couple of weeks ago. I’ll admit, walking into Ki Mexico and ordering a burger just didn't feel right at first, but I am so grateful I went against my usual routine. This creation was worth every bit of the $27 price tag.

Enter the Hamburguesa Drácula: an 8-ounce Wagyu beef patty topped with melted smoked cheddar cheese, savory beef bacon, fresh microgreens, and a sensational homemade blueberry-chimichurri. It was nothing short of incredible.

The wildest part? We may never see this exact burger again. Every single week, the burger concept drastically changes, giving us a front-row seat to local culinary genius. We absolutely love seeing our local chefs flex their creativity and have fun in the kitchen.
